Everytime I start writting a recipie I want to mention that's it's an easy recipie. It seems that I like quick and easy cooking full of taste. I don't have much patience for complicated cooking, maybe once and a while, and then it feels like a special occasion. So enjoy these very easy and tasty crackers. Great for apperitif, or on a buffet lunch or dinner, to bring over when invited…
The important point in this recipie is the cheese. In the original recipie the crackers are baked with mimolette cheese, a french orange colored cheese. It's has a very concentrated and profound fruity taste. If mimolette is hard to find, then may be Cheddar cheese could be good. In Israel, I replaced Mimolette by Kashkeval Cheese.
200 gr of Flour
80 gr of Mimolette Cheese ( can be replaced by Cheddar or Kashkeval or parmesan …)
70 gr of Butter
3 large pinch of salt
2 tbsp of sesame seeds
2 tbsp of poppy seeds
Finely grate the cheese
Mix together the flour, the cheese, and the salt in a mixing bol. Add the butter cut in pieces. Work the dough with your fingers.
When the mixture is lumpy, add the egg and 1 to 2 Tbsp of water to bind up the dough.
Create a cylinder with the dough, about 30 cm long. Spread the sesame seeds and poppy seeds on your working counter. Roll the cylinder on top with a little pressure to cover the dough cylinder.
Wrap the dough in a plastique film and let it harden in the fridge or in the freezer.
Preheat the over 180 C
When harden (about 1 hour) take the film off and slice the dough in 7 mm thick cylinders.
Spread them over the cooking sheet and bake for about 20 mn.
Cool off before tasting.
